Single -variety wine, obtained from a careful selection of the Estate’s Pinot Noir grapes.
Pinot Noir is grown on the slopes of the Passo delle Croci, hence the name Cantagrilli, one of the peaks of the Calvana mountains.
The area is rich in spring waters which guarantee this very demanding vine not to suffer from drought.
The microclimate of the place presents thermal excursions with cool nights that safeguard the varietal aromas of the grape.
It is drawn off directly into barrique where the malolactic fermentation also takes place.
It remains for a long time on the noble lees which are periodically stirred with the batonnage technique to enhance softness and structure.
